My inspiration was my successful dessert - tartlet with strawberries and asparagus. Asparagus, on which I based the recipe, is a very surprising ingredient. Its freshness and light spiciness form the basis of this novel flavor combination. The fruity taste of freeze-dried strawberries and blackcurrant gives the chocolate a pleasant sour touch and, in combination with the taste of grenadine, it has an exotic effect. Tarragon and red orange underline and balance the overall recipe.

Asparagus renaissance in Bohemia

Asparagus came to Bohemia during the 18th century. and was mainly cultivated in Moravia. Ivančice even supplied the entire monarchy with quality asparagus. After the war, other crops displaced asparagus.

This almost forgotten delicacy has been making a comeback in recent years. Especially in renowned restaurants. The Czech asparagus season lasts only three months - from April to June.

 

Ingredients:

cocoa butter, semi-skimmed milk powder, coconut sugar, freeze-dried black currant, freeze-dried strawberries, freeze-dried asparagus (2.1%), aroma: natural orange, natural tarragon, natural vanilla. Content of cocoa components at least 40%. Store in a cool and dry place. Made by hand in the Czech Republic
