The alchemical chocolate workshop of the Steiner & Kovarik chocolate factory in Prague regularly supplies you with taste gems. It´s our goal to offer you the healthiest possible and nutritionally rich chocolate without compromise. That's why we use the highest quality organic ingredients, such as coconut sugar, which has a low glycemic index, cocoa beans of the highest quality, natural vanilla or coconut milk. We carefully select all the ingredients for our chocolates from all over the world. We found the best cocoa beans of the trinitario and criollo varieties (the highest quality cocoa beans in the world) in Colombia in the Justinian Suarez family farm, from whom we buy them directly without intermediaries (direct trade). Neither we nor Justinian compromise. His beans are grown with love, care and respect for nature. He uses natural probiotics as a fertilizer, so the beans are organic and completely chemical-free, and they are grown in a natural environment without the preferences of monocultures and deforestation. We chose coconut sugar as a sweetener because it has a low glycemic index, it is not refined sugar and it is also the most gently processed sugar ever. However, it is not only the raw materials that make quality chocolate. Equally important is their processing. The process of fermentation is very important for the taste of chocolate, when cocoa beans ferment at a certain temperature under the strict supervision of farmers. Our cocoa beans are dried in the sun, then sorted, roasted, which has a big effect not only on the final taste, but also on how many beneficial substances remain in the cocoa. Because cocoa is a superfood, we roast it to 120 ° C to preserve as much of all the beneficial vitamins, minerals and antioxidants as possible. We opted for traditional production in stone mills. We do not alkalize or separate cocoa butter. The resulting taste and consistency are obtained by time and temperature during conching. To make the chocolate velvety soft and melt on the tongue, we conche it minimum 72 hours, then it is left to mature, then poured into bars, packed in beautiful packaging and travels to you. Gradually, other bean to bar chocolates with fantastic flavors such as rose, oyster mushroom with orange, Campotian pepper and many others are created.
At Prague Chocolate factory, we are proud to receive ecologically and lovingly grown products, among other things because we all share the same philosophy. None of us takes chocolate as a mere product of mass production, but we respect the uniqueness of everything that grows on our Earth, that passes through the hands of humans, and in the end surpasses us many times over. Aluna means "spiritual power" in Kogi language. Cocoa opens consciousness.
